The spritz is the typical Venetian aperitif and is one of the various types from the Austrian domination and comes from spritzen, meaning spray, schizzo when they used to drink beer, water and wine. Venetians today enrich it with Aperol, Cynar, Bitters or Select. Legend has it that shortly before 1848, Venetians tinted it red as a sign of dissent against their Austrian oppressors.
